Garlic Basil Chicken w/ Linguine Pasta

Ingredients

  • 6 boneless Chicken Breast
  • 2 tbsp Homemade Gourmet Garlic Basil Seasoning
  • 14 oz diced tomatoes
  • 1 10.7 oz package Romano’s Macaroni Grill Creamy Pasta Dinner

 

Directions

Place chicken, seasoning and tomatoes in a crock pot and cook on low for 4-6 hours.   Then prepare Romano’s Macaroni Grill Creamy Pasta Dinner per package instructions.  Add the Cooked Chicken to Pasta Dinner and Serve.

Lasagna

Adapted from Homemade Gourmet

  

 Ingredients

2  cups  shredded mozzarella, divided  

15  ounces  ricotta cheese  

1/2  cup  parmesan cheese  

1    egg  

1/4  cup  Homemade Gourmet® Garlic Basil Seasoning  

2  pounds  Homemade Gourmet® Garlic Basil Seasoned ground beef, precooked (see recipe)  

3-1/2  cups  Homemade Gourmet® Homestyle Spaghetti Sauce, prepared  

1  8-ounce box  of oven ready lasagna noodles  

 

 Directions

1. Preheat oven to 350. Combine 1 cup mozzarella with next four ingredients; set aside.

 

2. In a separate bowl, combine seasoned beef and spaghetti sauce. In greased 13x9x2 pan, pour thin layer of meat sauce to cover bottom of pan. Layer 1/3 of lasagna noodles over the meat sauce. Spread 1/2 of cheese mixture on top of meat sauce. Repeat layering until all ingredients are used and top with 1 cup reserved mozzarella cheese.

 

3. Bake, covered, for 30 minutes, remove cover and bake an additional 15 minutes until cheese is lightly browned.

Spaghetti with Italian Meatballs

Italian Mozzarella Meatballs

Adapted by Homemade Gourmet

 

 Ingredients

10  tablespoons  Homemade Gourmet® Italian Mozzarella Meatloaf Seasoning Mix  

1-1/2    ground beef  

1/2  cup  ketchup  

1    egg  

1  cup  shredded mozzarella cheese  

 

 Directions

1. Preheat oven to 350°. In a large bowl, combine all ingredients.

2. Shape mixture into 1-inch meatballs.

3. Place meatballs on foil lined pan or baking sheet and bake for 15 to 20 minutes.

 

 

Homestyle Spaghetti Sauce

Adapted by Homemade Gourmet

 

 Ingredients

5  tablespoons  Homemade Gourmet Homestyle Spaghetti Sauce Mix  

1  6-ounce  can tomato paste  

1  15-ounce  can tomato sauce  

2  cups  water  

1  pound  cooked hamburger meat, drained optional 

 

 Directions

1. In a pot, combine all ingredients except optional cooked hamburger meat.

 

2. Bring to a boil, then reduce heat and simmer 20 to 30 minutes. If you like, add cooked meat and heat through, about 5 minutes. Serve over cooked pasta.

 

Slow Cooker Option:

Place all ingredients except cooked meat in a crockpot and cook on low for 4 to 6 hours. Then, if you like, add cooked meat and heat through, about 5 minutes.

 

Meal Idea:

Pasta topped with our Homestyle Spaghetti Sauce is great served with a fresh-baked loaf of our Tomato Basil Bread and a crisp salad.

Chicken Cacciatore

Chicken Cacciatore

 Ingredients

4 cups chicken, cooked and chopped (2 pounds uncooked)

2 cups or more Homemade Gourmet® Homestyle Spaghetti Sauce, prepared according to label instructions

1/4 cup red cooking wine

1 cup onion-green pepper medley, chopped

1 4.5-ounce can mushrooms, drained

1 12-ounce package, your choice of pasta, cooked according to package directions

Directions

1. In skillet, combine cooked chicken pieces and sauce; turn to medium heat.

2. Add wine, vegetable medley and mushrooms. Bring to a boil.

3. Reduce heat and simmer for about 10 minutes, stirring occasionally.

4. Pour hot mixture over pasta and serve.

 

 

Chicken Parmesan

CHICKEN PARMESAN

 INGREDIENTS

3lbs Chicken Breast

2 eggs

2 C Homemade Gourmet Italian Meatloaf Seasoning

1/3 C olive oil or canola oil

2 cups or more Homemade Gourmet® Homestyle Spaghetti Sauce, prepared according to label instructions

12 oz mozzarella cheese, grated

1 C Asiago or Parmesan cheese, grated

 METHOD

Heat oven to 400 degrees. Lightly grease a 9 X 13 inch baking dish.

Rinse chicken breasts in clean water; pat dry. Place each breast between layers of waxed paper and pound to 1/4 inch thickness.

Lightly beat eggs with a fork until evenly mixed. Place Italian Seasoning Meatloaf Seasoning in a flat pan.

Dip chicken first in egg, then in Italian Seasoning Meatloaf Seasoning , patting to coat evenly with crumbs. Set chicken aside on a wire rack while you dip remaining chicken pieces.

In a large sauté pan, heat olive oil over medium-high heat until it shimmers and makes the breadcrumbs sizzle when you add it.

Add chicken.

Cook chicken about 4 minutes on each side, or until coating is bubbled and golden brown.

When done, place all of the chicken in baking dish. Top with Spaghetti Sauce to cover and sprinkle with cheeses. Bake 20 minutes, or until cheese begins to bubble and brown.

 

Cajun Pork Chops

Cajun Pork Chops

 Ingredients

6    pork chops  

1    Homemade Gourmet® Louisiana Gumbo Mix  

1  14.5 ounce can  low sodium chicken broth  

 

 Directions

1. Place all ingredients into a gallon sized ziptop freezer bag and SMOOSH. After labeling, Cajun Pork Chops, freeze until the day of cooking. This is a 4 meals in 4 minutes™ recipe, so your cooking options are:

 

BAKE: Thaw meat and marinade. Preheat oven to 350 degrees. Pour entire contents of bag into baking dish and cover. Bake approximately 40 minutes or until meat is no longer pink.

 

SLOW COOKER: Thaw until meal can slide out of bag. Place entire contents of bag into slow cooker. Cook on high for 4-6 hours or on low 6-8 hours.

 

GRILL: Thaw and discard marinade. Preheat grill to medium high heat. Place meat on grill and cook about 3-5 minutes per side depending on desired doneness.

 

You may substitute the pork chops with 3 pounds chicken breasts for a variation on this recipe.

Cajun Chicken Kabobs

Cajun Chicken Kabobs

 Ingredients

3  pounds  boneless, skinless chicken breasts, cut into 1 inch cubes  

3  large  bell peppers, color of your choice, cut in pieces  

2  large  onions, cut in pieces  

16    skewers (10 inches long)  

1    Homemade Gourmet® Louisiana Gumbo Mix  

1/2  cup  water  

1/2  cup  oil  

 

 Directions

1. Thread chicken, bell pepper, and onion alternately on skewers and place in a shallow dish. Set aside.

 

2. Combine mix, water, and oil in small bowl, stir until well blended. Pour marinade over kabobs. Cover and marinade in refrigerator for at least 2 hours.

 

3. Prepare grill and lightly brush grate with oil. Drain and discard marinade. Grill 8 to 10 minutes or until chicken is cooked thoroughly; turning occasionally to cook evenly.

 

TIP: If using skewers made from wood or bamboo, soak them in water for 30 minutes before use. This will keep them from catching on fire during grilling

Cajun Beer Bread

Cajun Beer Bread

 Ingredients

1    Homemade Gourmet® Basic Bread Mix 

1  cup  shredded cheddar or cheese of your choice 

1  12-ounce can  beer * 

1/2  cup  chopped red onion 

1/2  stick  butter, melted 

1    jalapeño, finely chopped 

 

 Directions

1. Preheat oven to 350 degrees. Grease an 8 ½” x 5″ loaf pan.

 

2. Prepare bread recipe using beer, (*milk can not be used).

 

3. Stir in shredded cheese, beer, red onion and jalapeño pepper.

 

4. Place mixture in a loaf pan. Pour melted butter over the bread and bake on a cookie sheet Bake for 50 minutes until golden brown.

Cajun Cake

Cajun Cake

 Ingredients

1-1/4  cups  vegetable oil  

4    eggs  

2  8-ounce  cans crushed pineapple, undrained  

1    Homemade Gourmet® Carrot Cake with White Chocolate Icing Mix  

1  stick  butter/margarine  

1  5-ounce  can evaporated milk  

1  cup  chopped pecans  

1  cup  flake coconut  

 

 Directions

1. Preheat oven to 350 degrees. Grease and flour 13x9x2 pan. Set aside icing mix packet.

 

2. In a large mixing bowl; combine oil, eggs, and crushed pineapple; add contents of cake mix packet ½ cup at a time. Beat on medium speed for 4 minutes until ingredients are thoroughly blended.

 

3. Pour batter into prepared pan. Bake approximately 45-50 minutes or until toothpick inserted in center comes out clean. Prepare icing during last 10 minutes of cake baking time.

 

4. Combine contents of icing mix packet with butter and evaporated milk in saucepan; cook, stirring often, over medium heat for 5 minutes, do not boil. Remove from heat and stir in pecans and coconut. Mix thoroughly and spread evenly on hot cake. Slice in squares and serve warm, if desired. Store leftovers in refrigerator.

Chicken Enchilada Soup

Chicken Enchilada Soup

Ingredients
7 tablespoons Homemade Gourmet® Chicken Enchilada Seasoning (or 1 mix)
1 14.5-ounce can diced tomatoes
1 cup milk
4 cups water
1 12.5-ounce cans diced chicken or 1 cup cooked chicken, shredded (optional)

Directions
1. In a 2-quart (or larger) stock pot, combine soup mix, diced tomatoes, milk and water.

2. Bring to a rolling boil on medium-high heat, then reduce heat and simmer 15 to 20 minutes, stirring occasionally.

3. If you like, add cooked chicken and heat through, about 5 minutes.
